Lemony cream cheese and berries cups, a delicious dessert!

Sweet cream cheese, a tad of lemon curd, fresh strawberries and blueberries, this is a delicious dessert to end a meal on a light and sweet note.

I like to serve this cream with my shortbread finger cookies, it adds some crisp to a creamy recipe, click here for my recipe.

Recipe :

Ingredients :

8 to 9 oz. (250 grams) cream cheese, room temperature

1/4 cup (50 grams) granulated white sugar

3 tsp (15 grams) lemon curd, click here for my recipe or store-bought 

1 pint (250 grams) raspberries and blueberries

Powdered or icing sugar optional

Prepare the cream: 

Add cream cheese and sugar to a bowl, with a spatula stir to incorporate sugar without overworking cream cheese, just make 4 or 5 folds max, you do not want the cream cheese to become runny

Add lemon curd, fold delicately and minimally

Taste and adjust sugar and lemon curd if needed but do not add too much lemon curd or else mixture might get too runny to pipe

Pour cream cheese mixture into a piping bag with a round tip

If cream cheese mixture is too runny, chill for about an hour

Assembly:

Pipe one layer of cream cheese mixture at the bottom of a glass or cup, arrange raspberries, pipe another layer of cream cheese, arrange blueberries

Add another small layer of cream cheese (or whipped cream) and place a raspberry in the center

Chill in your fridge until serving time

Before serving:

Just before serving, sprinkle with powdered sugar
