Fried Scones Sopapillas Pinterest

Fried scones or sopapillas recipe, deep fried dough much like doughnuts and similar to New Orleans beignets, served with a sprinkle of powdered sugar and a drizzle of honey, they are such a delicious treat!

Sopapillas are fried scones or fried dough, a famous Mexican street food. We like all kinds of fried dough or donuts in my family so I thought to make some in view of Cinco de Mayo celebration.

This recipe is very quick and easy to make, delicious too! The sopapillas have a bit of a donut consistency inside with a crispy crust, they should be hollow inside, I like to sprinkle them with powdered sugar and a drizzle of honey.

Recipe :

Ingredients:

1/2 cup (120 ml) lukewarm water (about 100°F)

1 1/4 tsp active dry yeast

1 tsp sugar

1 1/2 cup (180 g.) flour

1 tsp salt

1 tbsp. olive oil

Garnish:

4 tbsp. (56 g.) melted butter

Liquid honey

Icing sugar

1 bottle of oil for frying

Make the dough:

Into the bowl of your stand mixer with the dough hook attachment, add the lukewarm water (about 100°F), yeast and sugar, stir and let the yeast activate about 10 minutes

Into the bowl of your stand mixer, add the flour, salt and olive oil and start to knead at medium speed until the sides of bowl get cleaned, if the dough is too dry add water by the tablespoon, conversely if it is too wet add some flour, this is a very soft dough, it must remain a bit sticky

Lightly oil a large bowl, add the dough and let double in volume about 1/2 an hour

Fry the dough:

Into a wok or saucepan with heavy bottom, add the oil, about 3 inches (7cm) deep, heat the oil to about 360°F (180°C) and try to maintain this temperature

Lightly deflate the dough with your fingers

Flour your hands and grab small pieces of dough, flatten them and give them a round shape, no need to be precise

Carefully dip the pieces of dough into the frying oil, 5 at a time, and fry about 2 minutes per side or until they are puffed and golden on both sides

Gather the scones and lay them on a large dish covered with paper towel, brush them with butter immediately on both side

To serve:

Sprinkle with icing sugar and drizzle with some liquid honey
