Apple Puff Pastry Hand Pies Pinterest

These crispy apple puff pastry hand pies are filled with diced apple and vanilla pastry cream, these pastries are delicious with a cup of tea or as an on the go snack!

This recipe makes 6 pastries, you can double it if needed, there will be enough vanilla pastry cream for a double order.

To make these apple puff pastry hand pies, you will need:

  • First make my vanilla pastry cream and let it cool completely
  • Peel and dice 2 apples
  • Out of 1 or 2 puff pastry sheets depending on size, cut squares of 5x5 inches (13x13 cm)
  • In the center of each square, lay 2 tsp. vanilla pastry cream, top with 2 tsp diced apples, grab each corner and bring them to the center, brush them with egg white and stick them together, hide the closure with a round piece of puff pastry
  • Brush the pastries with an egg wash
  • Into the oven for 20 to 25 minutes or until golden, let cool completely on the baking sheet

Tip:     If after filling your hand pies you are left with diced apples and pastry cream, cook the apples with a chunk of butter and a tbsp. of honey, layer them with the pastry cream into small cups, that’ll make another delicious dessert.

Hand pies are so cute and they are a delicious alternative to the regular pies.

Recipe :

Ingredients:

2 or 3 sheets puff pastry depending on size

2 apples, peeled, cored and diced

1 cup vanilla pastry cream

2 tbsp. sugar

2 tsp cinnamon

1 egg, separated

Instructions:

Make the vanilla pastry cream according to my recipe and chill it

Preheat your oven to 400°F (200°C) and have ready a baking sheet layered with parchment paper

Cut the puff pastry into squares of 5x5 inches (13x13 cm) and as many 1 inch circles, in the center of each square, lay 2 tsp. vanilla pastry cream, top with 2 tsp diced apples, stir the sugar and cinnamon together, sprinkle some on top of the apples, grab each corner and bring them to the center, brush them with egg white and stick them together, hide the closure with a round piece of puff pastry

Add a few drops of water to the egg yolk and brush the pastries

Into the oven for about 20 minutes or until puffed and golden, let cool completely on the baking sheet

Note:

Always work with very cool puff pastry as it is easier to manipulate

Don't over fill your hand pies even if you think you can add a tsp of filling and still close them, they will crack open while baking!

How to dice apples: peel an apple, slice it (about 1/2-inch-thick slices), remove the core, cut each slice in sticks, dice the sticks

About the excess dough, cut as many decor shapes as you can (hearts, leaves, etc.) to decorate your next pie, freeze them on a tray and then store them in plastic bags. When you will want to use these decors, do not thaw them, decorate your pies with the frozen shapes, they will hold better while baking
