Easy strawberry clafoutis recipe, the original clafoutis recipe is made with whole cherries, juicy strawberries pair so well with the thick flan, a delicious dessert!
Clafoutis is a thick and firm flan that contains flour, although the original recipe calls for cherries, it can be made with any fruit, it is very easy to make and involves no mixer.
This is a very straight forward recipe, add all the dry ingredients to a bowl, mix, add all the liquids into a pitcher, mix, pour the liquids into the dry ingredients into a thin stream while whisking constantly, pour into a high sided pie mold, arrange the strawberries nicely and bake for 60 minutes at 340°F (170°C).
Strawberries are so juicy and as soon as in contact with sugar, they will release a lot of juice, that can’t be helped, but strawberries, juices and flan mingled together make such a delicious dessert!

3/4 cup + 2 tbsp. (175 g.) sugar
Zest of 1 lemon (outer skin grated)
Pinch of salt
1/4 cup (50 g.) corn starch
1/4 cup (50 g.) all-purpose flour
3 eggs
2 egg yolks
1 1/4 cup (300 ml) milk
1 1/4 cup (300 ml) heavy cream
1 pound (450 g.) strawberries, hulled
Utensils:
1 high sided pie mold about 9 inch diameter
Preheat your oven to 340°F (170°C). Butter or spray with non-stick spray a 9-inch diameter (23 cm) high sided pie mold, over your sink add 3 tbsp. sugar and spread them all around your mold by turning it around, discard the excess sugar, set aside
Into a medium bowl, add the sugar and rub the lemon zest in, add the salt, flour and corn starch, whisk together
Into a pitcher, add the milk, heavy cream, eggs and egg yolks, whisk together and pour into the dry ingredients into a thin stream while whisking constantly, if you can’t get rid of any small lumps, strain the mixture through a mesh sieve, pour into the prepared mold, arrange the strawberries nicely
Into the oven for 60 minutes, the flan must be slightly puffed, set and golden brown around the edges
Let cool completely and dust with powdered sugar, clafoutis can be cut in neat slices just like a tart
