Pancit Canton Noodles Pork and Veggies Stir Fry Pinterest

Pancit Canton noodles pork and veggies stir fry recipe, a flavorful filipino recipe made of stir fried pancit noodles, pork loin and veggies, so good! Pancit Canton is Philippines pride dish where it is served on special occasions, very similar to Lo Mein, delicious!

Pancit Canton noodles are another kind of dried wheat noodles but eggless, originally from China and nowadays more commonly consumed in the Philippines where it’s a traditional dish served on special occasions. Pancit canton is quite similar to Lo Mein.

In the Philippines, it is believed that since "noodles represent long life and good health, they must not be cut short so as not to corrupt the symbolism.”

Pancit Canton is great to clean up your fridge as it can be made with whatever veggies you have on hand.

To make this Filipino style Pancit Canton stir fry, you can use the same large frying pan all along, you will need to:

  • Marinate the pork about 15 minutes, quickly stir fry it, then set aside
  • Make the omelet, as typically in fried rices, an egg yolk is added to the hot frying pan, broken and cooked until barely set, then quickly scrambled, set aside
  • Briefly sauteed the veggies and make the sauce
  • Cook the noodles, pancit noodles are not very hard and quickly cooked, in general I add them to a large bowl, cover them with boiling water and with a lid, drain them once cooked
  • At last you can assemble veggies, pork and noodles, cook two or three minutes just to re-heat.

Recipe :

Ingredients:

Pancit Canton Noodles:

1 (8 oz.) pack. / 227 g. Pancit Canton noodles

Pork tenderloin:

16 oz. / 450 g pork tenderloin

2 tbsp. corn starch

1 tsp ginger powder

2 tbsp. soy sauce

3 tablespoon sesame oil

2 tbsp. white wine

Sautéed vegetables:

1 red bell pepper, julienned

5 or 6 Paris mushrooms, stemmed and minced

8 oz. (227 g.) bean sprouts

2 cloves garlic, minced

1/2 cup of hot chicken stock

2 tbsp. white wine

4 tbsp. soy sauce

1 tbsp. fish sauce

1 tsp ginger powder

1 tsp sugar

2 tbsp. Sweet Chili Sauce or more to taste

4 basil leaves

Salt and pepper to taste

Omelet:

1 egg yolk

Salt to taste

Prepare the pork:

Into a large bowl or plastic container, add the cornstarch, ginger powder, soy sauce, sesame oil and white wine, stir well

Slice the tenderloin, then cut it in strips and add them to the marinade, stir well and marinate for at least 15 minutes, stir from time to time

Into a large saucepan or wok, heat some vegetable oil on medium/high heat and stir fry the pork on all sides until golden

Remove from the pan and set aside

Make the omelet:

Brush a small pan with some vegetable oil, heat it up, turn off the heat and remove pan from heat, add the fork whisked egg yolk and let it cook

Roll up the omelet and cut it in strips, set aside

Sautéed the vegetables:

Into the same pan, heat some vegetable oil, add the garlic, red pepper, mushrooms, stir-fry for about 5 minutes until the vegetables start to wilt

Add the bean sprouts

Add the hot stock, stir and pour onto the vegetables, together with the wine and all the spices, toss and give it a boil, then lower the heat and simmer on medium/low heat for about 10 minutes or until the vegetables are tender

Taste and adjust seasoning

Set aside

Pancit Noodles:

Whilst the vegetables are cooking, cook the pancit noodles as per instructions on the package and set aside. In general, cooking time is 1 minute, what I do is I boil water, pour it in a large bowl, add my noodles, cover and stir them from time to time until they’re cooked (That’s one pan less on the stove to take care of)

Drain well, set aside

Assembly:

Into the same large pan or wok, heat 2 tablespoons vegetable oil and 1 tablespoon sesame oil, add the noodles, vegetables and pork, stir and sautéed quickly to re-heat all ingredients

Adjust seasoning

Add the omelet strips, stir, it’s ready!

Note:

Use any vegetables you have left over in the house for this recipe, replace the pork by beef, chicken or tofu if you wish
