Corn fritters, such a delicious side dish!

This time I made them with canned sweet corn, so they were a bit soft but still really delicious and the good thing is that you could add a few green peas or grated carrots, etc. to these fritters.

These fritters were shallow fried about 3 minutes per side or until golden and I served them with my Breaded Whiting Fillets, it was a fry day menu (isn’t fish served on Fridays, lol), doesn’t happen so often, such a treat, Mmmm….

Recipe :

Ingredients:

1 1/2 cups (285 g.) sweet corn kernels

1 egg white

1/4 cup (50 ml) water, cold

1/2 cup (130 g) flour

1/4 tsp baking powder

1/2 tsp salt

Vegetable oil for frying

Make the batter:

Into a medium bowl, add the egg white, water and salt, whisk until foamy

Stir together the flour and baking soda, add to the liquid and whisk just until incorporated, the batter should be thick enough but rather on the thinner side

Add the sweet corn kernels and mix with a spatula

Fry the fritters:

Into a skillet, heat about 1 inch of vegetable oil and spoon some batter like you would for small pancakes, fry about 2 or 3 minutes on each side or until golden

Serve with the sauce of your choice, I served mine with a mix of mayo, ketchup and Sriracha
