Potato waffles sweet recipe, serve them with fruit and a dollop of whipped cream for a delicious snack!
These potato waffles are sweet, crisp and a bit denser than standard waffles. They are very easy to make with lightly salted potato puree.
Here I sprinkled them with a mix of icing sugar and cocoa powder, heavenly!

1 1/2 cups (250 g.) 1 large potato, cooked and mashed
9 tbsp. (125 g.) butter, melted
1 tsp vanilla extract
1/4 cup + 2 tbsp. (80 g.) sugar
2 eggs, quickly beaten with a fork
1/3 cup (80 ml) milk
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
Vegetable oil to grease the waffle maker
Garnish:
2 tbsp. sugar + 1 tbsp. cocoa powder
Into a large bowl, add the mashed potato, butter and vanilla extract, mix with a spatula until fully incorporated
Add all the sugar, milk and beaten eggs, mix to incorporate
Into a bowl, stir together the flour, baking powder and salt, add to the potato mixture and stir to incorporate until the batter is soft and homogenous, rest the batter for 30 minutes to an hour
Heat your waffle maker, brush some oil on the plates, ladle about 1 or 1 1/2 cups batter on the plates, cook for about 4 to 5 minutes or to your liking
Sprinkle with a mix of sugar and cocoa powder or serve with your favorite toppings
