Matcha Raspberry Bread

This matcha raspberry quick bread is sweet and moist, in this recipe the addition of matcha green tea powder gives this loaf a slightly earthy flavor, combined with raspberries it’s a delight!

This matcha and raspberry bread is very easy to make, a classic loaf recipe with the addition of just 3 tablespoons of matcha powder.

No mixer or food processor are needed here, just one bowl of dry ingredients, another for the liquids, stir together and bake. Love these recipes with no extra dish washing!

I have always been intrigued by this green bread, you know, how would you feel about being served a slice of green cake? Well my husband and son didn’t wonder at all, they just digged in and loved it!

Recipe :

Ingredients:

3 large eggs

1 cup (200 g.) granulated white sugar

1 cup (8 oz.) (200 g.) greek yogurt

1/2 cup (120 ml) vegetable oil

1 1/2 tsp pure vanilla extract

1 3/4 cups (240 g) all-purpose flour

3 tbsp. Matcha powder

2 tsp baking powder

1/4 teaspoon salt

4.5 oz. or 24 to 30 Raspberries

Garnish:

2 tbsp. powdered sugar

1 tsp Matcha powder

Instructions:

Preheat your oven to 350°F (180°C)

Spray mold with floured spray or butter and flour

Into a large bowl, add the eggs, sugar, vanilla and yogurt, whisk until all the ingredients are well incorporated

Add the oil and whisk to incorporate

Into a small bowl, combine flour, matcha powder, salt and baking powder

Add the flour mixture to the wet ingredients, stir to incorporate with a spatula until you get a soft batter, do not overmix, a few remaining lumps is ok

Pour 1 layer of batter (try to make 3 layers in all) into the mold, distribute about 12 raspberries, repeat the process, top with the last layer of batter

Into the oven for about 55 minutes or until a skewer inserted into the center comes out clean and the sides of loaf start to detach from the mold

Let cool 15 minutes on a wire rack, run the tip of a knife along the sides of mold, turn over to take the loaf out, once completely cooled, add the icing sugar and matcha powder into a mesh strainer and sprinkle on top
