Caramelized hazelnuts and almonds meal and butter that can be used three ways: as candies (sooo good!), chopped into a coarse meal or as a paste.
A nut butter can be made of all sorts of nuts, I most commonly make it with hazelnuts or a mix of almonds and hazelnuts. You can also make pistachio meal and paste the same way, very interesting and really delicious.
With this recipe, I am making half praline meal and half praline paste, you can make only either if you prefer. Both meal and paste can be stored about a month at room temperature into closed jars.

1 cup (125g) almonds
1 cup (100g) hazelnuts
1 cup + 4 tsp (240g) granulated sugar
Line a baking tray with a silpat or parchment paper, arrange the hazelnuts and almonds in one layer, set aside
Into a large pan, melt sugar on medium/high heat until it becomes liquid and a golden color (Don’t try to accelerate the process by increasing the heat, you could burn your caramel)
Pour the caramel on top of the hazelnuts and almonds, let cool
Once the caramelized nuts are completely cooled, break in small chunks and add to the bowl of a food processor with the chopper device (At this point, you could also break the caramelized nuts into bite size chunks and eat them as candies, soooo goooood!)
Process until you obtain a coarse meal
Pour half of this coarse meal into a jar with a lid
Continue processing the rest of the caramelized meal until it becomes liquid, it can take several minutes. Stop your mixer from time to time, stir the mixture and bring it to the center of the bowl and mix away until you get the right consistency
Pour the paste into a jar with a lid
Caramelized nuts can be used as an addition to all your recipes with hazelnut meal, can be used in quick breads, pies, muffins, etc. I also like to add some into my fruit tarts.
Hazelnut paste is used as an addition to custards, most notably into the custard for the French pastry Paris-Brest. Since hazelnut paste is strongly flavored, be careful when using it into your pastries.
To clean up your utensils and pans, just boil some water, pour it into your pan and utensils and wait about 5 minutes, the caramel will completely melt and you will be able to effortlessly clean your pan.
