Easy Lo Mein pinteres

Easy Lo Mein recipe, beef meatballs and noodles stir fry, in this Asian recipe noodles and meatballs are cooked with a few vegetables of choice and a flavorful, hot and spicy sauce!

A delicious and housewife friendly dish, as it can be made with everything left in our fridges.

This said, it is my habit to shop at the Asian market. I find a lot of inspiration there, small treasures and prices are generally more affordable than in your usual supermarket.

I always have a few Asian basics in store, like noodles, bamboo shoots, coconut milk, dry shiitake, various sauces, etc.

Let’s make this Lo Mein!

Ingredients:

Egg Noodles:

1 pack 8.8 oz. / 250 g. egg noodles

Beef meatballs:

15.8 oz. / 450 g ground beef

2 shallots, minced 

1 egg

1 tsp ginger powder

1 tbsp. corn starch

1 tbsp. white wine

1 tbsp. soy sauce

Salt and pepper to taste

3 tablespoon vegetable oil

Sauteed vegetables:

1 yellow and 1 red bell peppers, cut in strips

2 small zucchinis, chopped

5 or 6 shiitake mushrooms, rehydrated and minced

1 inch fresh ginger root, sliced and diced

2 cups hot chicken broth

2 tbsp. white wine

4 tbsp. soy sauce

2 tbsp. cornstarch

1 tsp ginger powder

1 tsp sugar

1/2 tsp sriracha or more to taste

Salt and pepper to taste

Recipe :

Cook the egg noodles:

Cook noodles according to instructions on the pack, drain well and set aside

Cook the beef meatballs:

In the bowl of a food processor, add all the ingredients except thevegetable oil, process, check seasoning (you can microwave a small amount and taste), adjust seasoning if needed

Form small meatballs of about 1 inch

In a frying pan, heat 2 tbsp. vegetable oil on medium-high heat, add meatballs and fry on all sides

Set aside

Sauteed vegetables:

In a bowl, add hot stock, white wine, soy sauce, sugar, sriracha and corn starch, mix well

In a saucepan, heat 2 tbsp. vegetable oil, add all the vegetables, season with salt and pepper to taste, add ginger powder and stir fry until the vegetables start to wilt

Add the seasoned stock and give it a boil, set aside

Assembly:

Into a wok or large frying pan, heat 2 tbsp. vegetable oil and 1 tbsp. sesame oil, add egg noodles, sauteed briefly just to re-heat, add the vegetables and meatballs, toss briefly to re-heat all ingredients

Adjust seasoning if needed!
