Thai shrimp toasts recipe, crispy, spicy and flavorful, my favorite starter in Thai restaurants.
Served with sweet chili sauce, these toasts are delicious and really quick and easy to make!
1/2 pound (250 g.) raw shrimps
1 tbsp cilantro or parsley leaves
3 garlic cloves
1 inch fresh ginger root grated or 1 tsp powdered ginger
1/2 tsp powdered sugar
1 tsp pepper
1 pinch of salt
1 tsp Sriracha or to the taste
1 tsp Fish sauce (Nam Pla or Nam Prik)
1 tbsp sesame oil
1 tbsp soy sauce
1 egg white
6 slices white bread
Some frying oil
In the bowl of an electric mixer, add all ingredients and mix until finely ground and completely mixed
Taste mixture to check seasoning: quickly microwave a small amount of shrimp mixture, taste and adjust seasoning to your taste
Into a bowl, add shrimp mixture and chill a few minutes, up to an hour
Remove the crust of the toasts and toast them slightly, just until light brown
Halve bread slices in triangles
Spread shrimp mixture onto toasts in as thick a layer as bread slices
Into a frying pan, heat oil and fry toasts about 2-3 minutes on both sides, starting with the shrimp side down.
Set aside on a dish covered with paper towel
Serve with a small bowl of Sweet Thai Chili Sauce, or teriyaki sauce with a bit of Sriracha, or your favorite sauce for that matter!
