Chicken:
1-pound (450 g.) Chicken breast, cut into bite-sized pieces
Batter:
1/2 tsp salt
1/2 tsp white pepper
1 cup corn starch
1 egg
Sauce:
1/2 cup water
1 tbsp. cooking wine
1 tbsp. soy sauce
1 tbsp. rice vinegar
1 tbsp. oyster sauce
1/4 cup honey
5 dried red chilies
2 thinly chopped garlic cloves, to be added later
Slurry:
1 tsp cornstarch
1 tbsp. water
Other:
A quart of vegetable oil for frying
2 tsp sesame seeds for garnish
Into a bowl, add all the ingredients for the sauce except the garlic, stir, set aside
Into a wok or high sided frying pan, heat up about three inches of oil
Into a medium bowl, add the chicken and all the ingredients for the batter, toss to coat with your hands, it’s really the best way, once the oil is hot enough, fry the chicken in batches until golden and crispy, set aside on a plate lined with paper towels
Into a pan, add the chopped garlic and all the ingredients for the sauce, bring to boil, add the slurry, cook one more minute, do not overcook or the sauce will thin out too much, add the chicken, toss to coat with the sauce and plate, sprinkle some sesame seeds
Serve immediately with some basmati or jasmine rice
