Gnocchi with creamy porcini and sundried tomato sauce recipe, store bought gnocchi paired with a creamy porcini mushroom sauce and sundried tomatoes make for a quick and flavorful dinner ready in 30 minutes!
I made this recipe with some of my homemade gnocchi I had stocked up in my freezer, so handy! Just boiled some water, meanwhile made my sauce with a little white wine, a bunch of dried porcini and sundried tomatoes, dinner was ready in no time, what a delicious and comforting meal!
There are very few brands that make good gnocchi, De Cecco and Rana are delicious and keep their texture while cooking, all the others get too soft for me.

1 pound (450 g.) potato gnocchi, homemade or store-bought
1 shallot, chopped
A handful of dried porcini
4 sundried tomatoes, coarsely chopped
1/2 cup (120 ml) white wine
3/4 cup (200 ml) heavy cream
Salt and pepper to taste
a pinch of Cayenne
Grated Parmesan to taste
Some olive oil for cooking
Into a large pot, bring to boil a great amount of water, add a tsp of salt, cook the gnocchi according to the instructions on the pack, normally 1 or 2 minutes until the gnocchi rise to the surface of water, gather them immediately and set aside into a bowl, sprinkle some olive oil and toss to coat
Meanwhile make the sauce, into a large frying pan, heat some olive oil, add the chopped shallot, cook until translucent
Add the white wine, dried porcini and chopped sundried tomatoes, cook until the wine is reduced to half
Add the heavy cream, salt and pepper to taste, a pinch of Cayenne, bring to boil, cook for one more minute, add the gnocchi, toss, serve immediately with some grated Parmesan on the side
