Homemade chicken Kiev recipe, chicken breast stuffed with garlic butter, chicken Kiev is one the most delicious oven baked chicken recipes and sure to impress your guests, so flavorful!

Chicken Kiev is not a quick recipe as it needs some preparation, some freezing but the result is overwhelming.

To make this recipe, you will need to pound the chicken breasts rather thinly or you might prefer to ask your butcher to do it for you.

You will make a garlic and parsley butter, place it in the center of the larger end of one chicken breast and wrap it like you would for a spring roll, then wrap it in plastic film and chill 15/20 minutes just to set its shape.

You will coat the chicken rolls in breadcrumbs and chill them again for a few minutes to ensure that the seams be well sealed. Finally you will deep fry the rolls before baking them.

All this prep/chill process is meant to keep the garlic butter enclosed into the chicken.

You can serve chicken Kiev with any sides you like, I chose to serve it with store-bought gnocchi and green beans quickly sautéed into some of this wonderful garlic butter I had kept.

Recipe :

Ingredients:

Garlic and parsley butter:

1 garlic clove, thinly crushed

3 tbsp. parsley, chopped

6 tbsp. butter, at room temperature

Chicken:

4 chicken breasts, thinly pounded

salt and pepper to taste

1 cup flour

2 eggs, beaten

2 cups breadcrumbs

Some vegetable oil suitable for deep-frying

Sides:

17.6 oz. (500 g.) gnocchi, cooked

17.6 oz. (500 g.) green beans, cooked

Salt and pepper to taste

Make the garlic butter:

Into a small bowl, with a fork, mix together all the ingredients, wrap the garlic butter into a plastic wrap and refrigerate for about 15 minutes

Prepare and cook chicken breasts:

Season chicken breasts on both sides with salt and pepper to taste

Place 1 chicken breast in front you, large end closer to you, place about 1 tbsp. butter in the center of the large end and wrap like a spring roll: Fold over the bottom end of breast, roll tight one turn, fold both sides and roll the whole breast tight keeping the sides folded, then wrap tightly into a plastic wrap, proceed with the other breasts

Freeze for about 15 minutes

Add the flour to a shallow dish, the beaten eggs to another and the breadcrumbs to another

Coat each chicken roll with flour, then dip into the eggs, then coat thoroughly with breadcrumbs

Freeze again for 15 minutes, you don’t want to freeze the chicken completely, just set its shape

Preheat your oven at 400°F (200°C) and line a baking sheet with aluminum foil

Into a frying pan, heat some vegetable oil, about 2 inches, add the chicken rolls seam side down, two at a time, and fry for one minute on each side, set aside on baking sheet

Into the oven, in the center, for about 15 minutes or until chicken rolls are beautifully golden and crisp

Set aside for 5 minutes into the baking sheet (To avoid burns with the bubbling butter)

Sides:

In the meantime, heat some garlic butter into a pan and quickly sautéed gnocchi and green beans, season to taste

I have heard of chicken Kiev but never actually knew what it was - this looks delicious. Especially on top of that gnocchi - yum!
